No longer does the sausage roll have to be an indulgent and guilty treat, I created this recipe to be as nutrient-dense, plant-based and super easy. My sausage roll filling is a mix of Pulled Oats plant-based protein, sweet potato, herbs, nutritional yeast, and other wholesome ingredients. My simple recipes swaps, buttery pastry for a crunchy wholegrain wrap that when baking is just as delicious and crunchy yet guilt free. 240g pulled Oats 1 onion, diced 1 garlic clove, minced 1 cup sweet potato, diced or grated 1 bunch coriander, chopped 1 lemon ½ tsp fennel seed ½ tsp cumin seed 1 cup nutritional yeast 3-4 whole grain wraps Method Preheat oven to 180 degrees In a pot on a medium add 1 tbsp of olive oil, add onion and garlic and sweet potato and cook until tender. Once tender add pulled oats, coriander, fennel seed, cumin seed and nutritional yeast and cook for a further 5 minutes until combined. Lay your wraps on the bench, spoon a generous amount of filling in the middle then carefully roll up your sausage rolls to make a large cigar. Slice your rolls to your desired size, place on a baking tray lined with parchment paper and bake for 15 minutes until golden, or place in the freezer for later use. Serve with your favourite sauce.
