Description: In this video, Betty demonstrates how to make Spicy Oven-Baked Chicken Breasts. This is an entrée that is quite flavorful, yet also very healthy. I think you will enjoy it! SPICY OVEN-BAKED CHICKEN BREASTS Ingredients: 2.5 pounds chicken breasts 3 tablespoons mayonnaise 3 tablespoons Dijon mustard 1 egg 1 teaspoon salt 1 teaspoon freshly ground black pepper 1 teaspoon paprika ½ teaspoon cayenne pepper 1 teaspoon garlic powder 2 teaspoons Italian seasoning cooking oil, as needed Instructions: In a large bowl, cut the chicken into equally-sized pieces. Rinse and dry with paper toweling. Set aside. In a small bowl, whisk together mayonnaise, Dijon mustard, and egg. Set aside. In another small bowl, mix together salt, black pepper, paprika, cayenne pepper, garlic powder, and Italian seasoning. Set aside. Choose a casserole dish or pan that is ovenproof, such as a 9 in. by 11 in. by 1 in. Pyrex dish, or, alternatively, a sheet pan, covered by aluminum foil with a rack placed on top. The rack will allow heat to circulate all around the chicken, making it crispier. The aluminum foil is there to catch the drips and to make clean-up easier. Spray dish or pan with cooking oil spray until cooking surface is lightly covered. Using tongs or your hands, dip each piece of chicken individually into the mayonnaise mixture and place on rack or in dish. When all coated chicken pieces have been placed, sprinkle herb mixture evenly over coated chicken pieces. Place chicken in a 425 degrees F oven for 35 minutes. Check chicken in oven after it has cooked for about 25 minutes. The chicken may be done in less time, or it may take longer than the estimated 35 minutes. The chicken is done when you are able to cut through it with a steak knife, and the chicken is white. Remove from oven, place chicken pieces attractively on a nice platter, and serve immediately.
