Apple Pie Cookies Ingredients: Dough: 2 cups Bob’s Red Mill 1 to 1 baking flour 1 Tbsp. baking powder ¼ tsp. Baking soda ¾ tsp. Salt 6 Tbsp. coconut oil ½ cup sugar ¾ cup milk Apple Filling: 4 granny smith apples organic preferred, cored, peeled, sliced 1 tsp. Cinnamon 1 tsp. Cornstarch ¼ cup sugar Directions: Preheat oven to 425 degrees F. Place the apples in a saucepan. In a small bowl, combine the sugar, cinnamon, and cornstarch and pour it over the apples. Give this a toss to distribute. Place the pan on the stove over low heat with a lid and stir occasionally. Cook 15 minutes or until the apples are soft and tender. Turn off the heat and set aside to cool. In a medium size bowl, combine the flour, baking powder, baking soda, and salt. Set aside. Place the coconut oil in a small bowl and heat either in the microwave or even in a pot of warm water to melt the coconut oil. It doesn’t need to be completely melted but at least 50%. Pour the oil into a large mixing bowl and add the sugar. Using a hand mixer, blend until the sugar dissolves and the mixture becomes creamy, 1-2 minutes or so. Add ⅓ of the flour mixture and ⅓ of the milk to the coconut oil/sugar and blend until the flour is just incorporated. Scrape the sides of the bowl with a spatula occasionally. Then add the second ⅓ of the flour and milk and blend it until just incorporated. Be sure to not over mix. Then add the last portion of the flour/milk mixture and blend it in one last time. Take a large spoon and scrape the edges of the bowl to incorporate any leftover flour. I used a small scoop for the dough to keep the cookies uniform in size but any spoon will work. Place the cookies on a parchment paper covered baking sheet. These cookies don’t spread much at all so you can place them close together but not touching. Press the dough so that you create a disc with a valley in the dough to place the pie filling. Once all the dough is shaped into cookies, spoon about 2 tsp. to 1 tbsp of the filling on top of each cooking, mounding it. Bake the cookies in a 425 degrees F oven for 12 minutes. You are looking for the cookies to brown slightly on top and have a nice golden brown on the bottom. Remove the cookies to a wire rack to cool completely and then place in a container with a tight fitting lid. At first the cookies are crunchy and chewy but will soften by the next day. These are very yummy and just might replace that apple pie! I can even see these served with a dollop of whipping cream or even some vanilla ice cream! Enjoy! Thanks for watching and sharing!
