Check out my "Live Streamed Videos" playlist here youtube.com/playlist?list=PLrIzGV25YD__EboJRxNeHYowY136sOjsO ZUCCHINI BREAD RECIPE makes 2 loaves or 24 muffins 4 eggs (beat until foamy) 2/3 C oil 1 C sugar 2 C brown sugar 3 1/2 C grated zucchini (about 1 ½ lbs) 1 Tbsp real vanilla 4 C flour 1 ½ tsp salt 2 1/2 tsp baking powder 1 Tbsp cinnamon 1 C nuts 2 C Chocolate chips (optional) Preheat oven to 350 In a medium bowl beat the eggs until foamy Add the oil, sugar, brown sugar and vanilla – mix well Add the zucchini and mix In a large bowl mix the flour, baking powder, salt, and cinnamon, whisk Add the wet to the dry and blend Add the nuts (and/or chocolate chips) Pour into two grease 8 1/2 x 4 1/2 loaf pans Bake for 55 mins ** For Chocolate Zucchini Bread substitute ½ C flour for ½ C Cocoa.
