Over medium heat, heat the oil in a large pan. Add onion and cook for about 1 minute. Add guanciale and cook for about 4 minutes. Add crushed tomatoes, salt and pepper. Stir, reduce heat to low, and cook, stirring occasionally, until sauce thickens, 15-20 minutes. 2. Bring a large pot of water and salt to a boil, add the pasta and cook, stirring occasionally, until al dente. Drain pasta. 3. Add drained pasta to sauce and toss with tongs to coat. Add percorino cheese and toss. Serve!
