Description: If you're a fan of Mexican food, you may have heard of a dish called Chili Colorado or chili con Carne which are both made with beef. The meat is seared and braised in a guajillo sauce that is out of this world, delicious. It derives all of those deep pepper flavors and the color becomes this oxblood tone that penetrates the meat. I've shown you how to make this sauce before but to keep things simple I've just always called it chili sauce or enchilada sauce. It's also what's used to make Birria Taco's. It's part of the marinade for barbacoa and the dipping sauce you dip your tacos in. Anyway, I put together a recipe today similar to this but I used pork spare ribs instead and as you can see the results were nothing less than fantastic. Honestly, in my opinion, these are some of the best ribs I've had in a long time. As you can see I serve it with rice but I reheated it today and served it "Eggs in hell style" for brunch but I added some seasoned and sauteed shrimp and a couple of fried eggs, over medium. So ultimately what you got here is Seared and Braised Spare Ribs in Guajillo Chili Sauce with Shrimp, Rice and Eggs, topped with Green Onions and Catija Cheese.
